Healthy Summer Dessert

The hot days are here to stay for a while and with the Fourth of July right ahead of us I wanted to post a refreshing, healthy, fun recipe.

You can swap out the banana for extra berries or add any fruits you prefer. Experiment with different flavors - some mango and shredded unsweetened coconut would be amazing. Some pineapple/mango/coconut, strawberry/peach - the sky is the limit!

This is a healthier option than store bought ice pops which contain added sugar and artificial ingredients and they are super easy to make. Youŕe getting healthy fat from the coconut milk and nutrients and fiber from the fruit.

Berry Banana Creamsicle Pops
Serves 4

Ingredients

  • 1¼ cups coconut milk (look for 100% whole fat unsweetened organic coconut milk in a can with no additives or you can use Silk Unsweetened Coconut Milk)
  • ¼ cup freshly squeezed orange juice
  • 1 teaspoon orange zest
  • 2 tablespoons maple syrup or raw honey
  • 1/2 ripe banana
  • ½ cup mixed organic berries (you might want to dice the strawberries if they are big)
  • Pinch sea salt
  1. Instructions
    Place all of the ingredients into a blender and blend until smooth or you can blend all ingredients but leave some whole pieces of berries or other fruits to add some texture.
    Fill popsicle molds to the top and place the popsicle stick in the mold.
    Freeze in freezer for at least 2 hours or overnight.
