Sweet Potato Black Bean Burger
2 Sweet Potatoes
1 C Cooked Quinoa
1 C. Gluten Free Oats
1 Can Black Beans, rinsed
½ Small Red Onion, diced
½ C. Cilantro
2 t. Cumin
1 t. Chili Powder
1 t. Salt
½ t. Pepper
1 T. Coconut Oil
8 Burger Buns
Preheat oven to 400 degrees and bake sweet potatoes until tender 30 – 45 minutes. Let cool.
Rinse quinoa and cook in 2/3 C. water. Once it comes to a boil simmer 10-15 minutes. Drain and let cool.
Grind oats in a food processor or use oat flour.
In a large bowl combine all ingredients except the coconut oil, buns and toppings. Mix together well with hands or a spoon. If possible cover and chill for a better hold.
Shape into patties.
Add coconut oil to a skillet and on medium heat for 3-4 minutes per side.
Serve on buns with your favorite toppings. I usually use a gluten free bun but for this one, they tend to be a little tough. If you are not gluten sensitive I've found a great brioche bun at my local coop.
If you are gluten sensitive, a lettuce wrap works great for this one too.
