What inspired me to become a wellness professional?

My motivation for becoming a dietitian started in high school. I needed to fill a vacant slot in my schedule and thought a nutrition class sounded interesting. At that time in my life I was eating a lot of fast food dinners and oh so many sweets. So, I thought what the heck. I ended up loving the course and knew then that I wanted to be a dietitian. How my clients describe their first visit?

I felt empowered after working with Patty. She is great about explaining the how's but also helped me understand my why's. Change can't happen if you're not ready and Patty does a great job of meeting me where I am at. I had a list of lifestyle and diet changes that would help me reach my goals. I choose to start small and build on my successes. Patty did challenge me with a harder goal (increasing my activity), which I am pleased to say I am succeeding even my own expectations. Small steps, when done consistently and with support, has made all the difference!

What I say to someone who has never tried Jicama (hic-a-ma)?

Hick a What? Believe me, that was my response a few years back. So what is jicama? Some call it a Mexican turnip or potato. It is best when eaten raw. I call it a surprising blend of crunchiness, sweetness and juiciness that is delicious in salads or as a snack with peanut butter. Don't let the look intimidate you. The skin is thin and easy to trim away with a paring knife. Whether chopped, sliced or julienned, it will be a new favorite. Oh, and did I tell you it is super nutritious. Low fat, high fiber and a natural source of pre-biotics! I bet you can't eat just one bite!
