Paula Mendelsohn received her Bachelor of Science in Food Science and Human Nutrition from the University of Florida at Gainesville in June of 1976, and her Master’s in Public Health Nutrition from the University of North Carolina at Chapel Hill in May of 1980. She completed her Dietetic Internship at Johns Hopkins Hospital in Baltimore, Maryland in 1979, and as her first job after graduate school served as the Nutrition Supervisor for a Laotian Refugee Camp in Northern Thailand, where she also passed her Registration Exam as a Dietitian in 1980.
